Recipe for Making a Cake with Coffee

Everyone likes to enjoy a good coffee cake. Even more when it is easy to make and rich in taste. Coffee cake is a good match for your morning coffee. Making coffee cake is very easy, and you don't need special ingredients. It takes 25 minutes for preparation and 30 minutes for cooking. So, it takes 1 hour approximately to cook coffee cake.

Ingredients

Ingredients needed for cake sponge

 

  • Plain flour - 200 gram

  • Baking Powder - 2 ½ tsp

  • Coffee powder - 3 tbsp

  • Eggs - 4 medium-sized

  • Butter - 220 gram

  • Light brown sugar - 220 gram

  • Milk - 2 tsp

  • Salt - ½ tsp

 

Ingredients for Buttercream

 

  • Butter - 200 gram

  • Icing sugar - 400 gram

  • Vanilla extract - ¼ tsp

  • Instant coffee powder/granules - 8 tsp

  • Boiling water - 4tssp

  • Some milk

 

Instructions

 

Sponge

 

  1. Pre-heat the microwave to 160 degrees Fahrenheit.

  2. Take 2 baking dishes and apply butter paper.

  3. Take a bowl and mix all the cake sponge ingredients until they are all combined well.

  4. Pour the mixture separately and bake for thirty to thirty-five minutes until cooked.

  5. After the sponges are cooked, take them out and let them cool.

 

Buttercream

 

  1. Mix instant coffee with boiling water and set it aside to cool it.

  2. Take a bowl and stir butter, vanilla extract at low speed. Stir until they get soft.

  3. Now, add icing sugar and stir more until a smooth texture appears.

  4. Now, add coffee slowly to the mixture, 1 teaspoon at a time. Keep stirring the cream after every addition until the added coffee is fully blended

  5. Check if the consistency is soft enough and can be spread on bread. If the texture is hard, then add milk to make it soft. Same as coffee, add 1 teaspoon of milk at a time and keep checking consistency after every addition.

 

Cake Making

 

  • Take one sponge and lay it on the serving dish. Spread the ⅓ of buttercream evenly. Use the 2nd sponge as the top layer. Now, again apply ⅓ of buttercream on the sponge.

 

  • Use the remaining buttercream for the decoration. Fill it in the piping bag and can try any of your favourite nozzles. Pipe twelve blobs of the cream evenly spaced at the edges and in the middle.

 

  • The cake is ready to be served.

 

FAQs

 

  1. Can I replace powdered or granulated coffee with freshly brewed coffee?

 

No, it is not recommended to use freshly brewed coffee. It is because powdered or granulated coffee is an easy choice for getting instant coffee flavour in both buttercream and cake sponges. Adding freshly brewed coffee will add unnecessary liquid to the mixture.

 

Ground coffee beans are also not suggested because they also need to be brewed to bring taste to the cake. Coffee beans will remain undissolved, and both sponge and buttercream will be bitter.

 

  1. Can decaf coffee be used in the recipe?

 

Yes, you can use decaf coffee in the recipe. Decaf and instant coffee both give the same taste and texture.

 

  1. Can plain flour be replaced with self-rising flour?

 

Yes, you may use self-rising flour, but the quantity will increase a little. For 200 grams of plain flour, you should add 210 grams of self-rising flour.
